Baked garlic and lime chicken breasts

ChickenwithlimeChicken is a low fat, lean meat that can be used in many dishes. This recipe is full of flavour and healthy too.

Note:
the recipe with just chicken is low in sugars/carbohydrates once you add a source of carbohydrate for example baby boiled potatoes, potato salad or pasta, these will all affect blood glucose levels and will need to be counted towards the overall carbohydrate content of the meal.chickenwithlime_nut_table

Ingredients – Serves 4 Adults

  • 4 boneless, skinless chicken breasts, 520g/1lb 2 1/2 oz
  • 25ml / 1fl oz. of fresh lime juice, half a lime
  • 1 tablespoon of olive oil
  • 4 cloves of garlic, finely chopped or minced
  • Salt and freshly ground black pepper, to taste

Method

  • Mix the lime juice, olive oil and garlic together in a large sealable plastic bag
  • Add salt and pepper to taste
  • Add the chicken to the bag and seal it, removing as much air from the bag as you can
  • Marinate chicken, turning bag over once or twice, for at least 4 hours or up to 24 hours in refrigerator
  • Preheat oven to 200°C / 400°F / Gas Mark 6
  • Remove chicken from marinade and discard the marinade
  • Arrange the chicken, in a roasting tray. Leave some space between each piece
  • Season chicken with salt and pepper and roast in the oven until cooked through, about 25 to 30 minutes
  • Once the chicken is cooked, transfer the roasting tin to the grill or if your oven has a grill just turn it to the grill setting
  • Grill the chicken until it is about to get crispy, about 2 to 3 minutes


Serving Suggestions

Serve with baby potatoes and green vegetables (broccoli, mange tout, French beans or peas)
