Just because it’s raining or cold outside it doesn’t have to mean that you can’t have that summer feeling!
Ingredients – Serves 4 Adults
- 8 chicken thighs
- 2 medium onions, thinly sliced
- 1 green pepper, thinly sliced
- 6 dessertspoons of tomato sauce
- 1 dessertspoon of Worcestershire sauce
- 1 teaspoon of chilli powder
- Salt and pepper, to taste
Method
- Pre-heat the oven to 190°C / 375°F / Gas Mark 5
- Mix all ingredients except the chicken to make the sauce
- Arrange the chicken in a single layer in the casserole dish
- Spoon sauce over the chicken
- Cover and bake for 55 to 60 minutes, until the chicken is tender and the juices run clear
Serving Suggestions
Serve with a baked potato and crispy side salad each
Once you add a source of carbohydrates for example baked potato, potato salad or rice, all these affect blood glucose levels and will need to be counted towards the overall carbohydrate content of the meal.
