Omelettes can make a quick and filling meal, they are very healthy, especially if you take care to include lots of vegetables. Why not try this variation on the traditional omelette?
Eggs are a great source of protein and if you have Diabetes its fine to include eggs as part of your healthy eating plan up to 6 weekly unless you have raised cholesterol you should aim not to eat more than 4 weekly.
Ingredients – Serves 4 Adults
- 1 tablespoon of vegetable oil
- 2 medium onions, chopped
- 1 red pepper, cored and chopped
- 4 medium eggs
- 2 large potatoes, chopped and boiled
- 1 dessertspoon chopped parsley
- Black pepper, to taste
Method
- Heat 1 tablespoon of oil in a frying pan
- Add the onions and cook until soft
- Add the red pepper, cook for 5 minutes
- Beat the eggs in a bowl. Add pepper
- Stir the potatoes, parsley and fried vegetables into the egg mixture
- Pour the egg mixture into the heated frying pan and spread evenly to the edge
- Cook for 5 minutes until the egg mixture comes away from the side of the pan
- Place the pan under a pre-heated moderate grill for about 3 minutes to cook the top of the omelette
Serving Suggestions
Serve immediately with tossed green salad
